The Three-Ingredient Quesadilla (Two of Which Are Cheese)

Cooking, for me, means doing the least amount of stovetop activity that still results in a warm food item. Today’s entry: the quesadilla, humanity’s most forgiving meal.

Here’s what you need: one tortilla, cheese, and a second tortilla, which is technically also a form of cheese delivery if you think about it hard enough.

Step one: put cheese on tortilla. Step two: put second tortilla on top. Step three: apply heat until the cheese admits defeat and melts. Step four: flip it, which is the only part of this recipe requiring actual coordination, and honestly the part I resent most.

That’s it. That’s the recipe. No dicing, no marinating, no “letting it rest” — food doesn’t need to rest, it needs to be eaten.

Serve with salsa if you’re feeling ambitious, or don’t, if you’re feeling more like me.
